Kuşlar Simit Fırını – Jewish Bakery, Bergama, Turkey

Kuşlar Simit Fırını is a Jewish bakery in the Turkish city of Bergama, established in 1982.1 The business is a staple in its neighborhood, especially for breakfast.

Description

Two gleaming display cases protrude out to the sidewalk, piled to the top with Peksimet. Through the open window between the cases, aromas fill the air and customers can see the bakers sliding sesame-sprinkled simit and flower-shaped nohut mayasi ekmek in and out of the traditional wood-fired brick oven. Reviewers of this bakery commend it for using traditional baking methods and having friendly staff.2

Their goods include:

Simit - Bagels

Nohut Mayası Ekmek - Chickpea sourdough bread.

Peksimet - Twice-baked, long-lasting bread that originated in Western Turkey, and is at risk of extinction due to the difficult baking process.3
